Note that with fondant cakes there is still icing UNDER the fondant layer.  The type and colour of icing you choose does not affect the colour of your fondant cake so don't worry about that in your selection process.

Why Do I Use Cake Mixes?    Why mess with something good?  Please note that most of my cakes are made using Cake Mixes.  I have NEVER had an issue with a customer and fact that I was using boxed cake.  I have spoken to many cake decorators and have been told not to be afraid to use them cause they are reliable and the average person does not know the difference.  I've even had chef's at venues try my cake and compliment on it ...lol  They didn't know I was using a box :)      Also the fact that I do really heavily detailed cakes that are HEAVY, I need a denser cake that can withhold that.  Box cakes are great for this.  Even the CAKE BOSS on TV you'll notice all his detailed fondant cakes are done with the same basic vanilla sponge cake (nothing fancy!) cause the cake needs to be able to hold up....   Also -- My business mostly appeals to a demographic of brides and people who are looking for an awesome looking cake (that tastes good too!) but want to save money.  That's another reason why I go this route generally; however always have the homemade option too :)    Sorry i'm just giving you a bit of background here as to why i went this route with my business so it makes sense :)  True crowd pleasers and never an issue with quality!  My signature favorites are the traditional Devils Food and French Vanilla Flavors; however we can use whatever flavour you like from this collection.  If you are interested in home made cake flavours, I work with a friend and fantastic baker for home made recipes.
